Ember & Ash was born from a singular obsession: what happens when the oldest cooking technique in human history meets the precision of modern gastronomy? Our wood-fired hearth, imported from Catalonia, burns at exactly 900°F — the sweet spot where crust caramelizes and centers stay silk.
Chef Marco Bellini spent 12 years apprenticing under Paul Bocuse before returning stateside with a mission: no shortcuts, no frozen proteins, no compromises. Every plate is a conversation between fire, time, and intention.
